Among vegans and vegetarians, vegan bone broth has become more popular in recent years. A vegan diet lacks key vital vitamins and minerals including calcium. This may lead to bone deterioration and nutritional insufficiency. Vegan bone broth is a rich source of minerals and nutrients, such as calcium, magnesium, potassium, and others, and may be substituted for dairy or supplements without negative side effects.

Recipe

This plant-based alternative to traditional bone broth is prepared by simmering a variety of vegetables, seaweed, herbs, and aromatics together. As a consequence, you end up with a soup that is rich and hearty, with a flavour that is both reassuring and curative in nature. Ingredients

  • 10 cups of water
  • A big onion
  • 2–3 garlic cloves (skin on)
  • 3 large carrots and celery ribs, chopped
  • 1 can of whole peeled tomatoes (without juice)
  • Dry chickpeas, 1/3 cup
  • Dried mushrooms, 75g
  • Wakame seaweed, 30 g
  • A serving of miso paste

Instructions

  1. Incorporate all components into the Instant Pot. Give it a brief stir, then cover it with the lid. Ensure the vent is properly sealed.
  2. Increase the pressure and set the timer for 120 minutes (2 hours). The Instant Pot will take around 15 minutes to reach pressure before turning on.
  3. Once the cooking cycle is complete, leave the pressure to relax naturally for about 15 minutes before turning the vent to remove the remaining pressure. Take off the lid.
  4. Line a sieve with cheesecloth and place it over a basin. Pour the Instant Pot’s contents through the cloth and strainer, taking care to collect just the liquid. Toss the vegetables or puree them with water to make a soup (though it’s delicious!).
  5. Allow the vegan bone broth to cool down to room temperature in the jars. Seal and refrigerate or freeze for four to five days.
  6. To serve, consume the broth as is or warm it slightly on the stove. If preferred, season with a little salt and pepper.
