  1. Olive oil should be heated in a big saucepan over moderate heat. Sauté the onion for 3–4 minutes, or until it softens. Dice some carrots, celery and zucchini, and throw them all into the saucepan with some chopped garlic. For tender veggies, sauté for around 6 minutes.
